There are Christmas cookies that immediately bring back childhood memories. Little Bethman are part of it for me. These small, golden-brown marzipan balls with their three almonds are not only pretty to look at, but also very special cookies in terms of taste: tender, juicy and slightly caramelized. The original Little Bethman recipe comes from Frankfurt and has a history of over 200 years. At that time, the Bethmann banking family had the small marzipan pastries baked, as a sweet tribute to their sons. And that's exactly how they still taste today: simple, elegant and simply Christmassy.

Ingredients
  • 200 g marzipan paste
  • 125 g ground almonds
  • 1 Egg
  • 50 g powdered sugar
  • 100 g blanched almonds
  • 1 tbsp milk
Instructions

    Separate the egg. Grate the marzipan with a kitchen grater. Knead into a dough with ground almonds, egg whites and powdered sugar and form balls. Place on a baking sheet with baking paper.

    Whisk the egg yolks with milk and brush the balls with it. Press 3 almonds into each ball.

    Preheat the oven to 170 degrees top/bottom heat and bake for 15-17 minutes. Let cool.
