Preparation of vanilla pudding

First, prepare the custard for the cream. This must cool to room temperature. To do this, whisk the cold milk with sugar and vanilla pudding powder in a small saucepan with a whisk until lump-free. At medium setting of the stove, the mixture is brought to a boil, stirring constantly. As soon as the cream thickens, remove the pot from the heat. The cream is poured into a bowl. Directly on the surface, the cream is covered with cling film. Then let the cream cool.
Preparation of the dough

For the dough, flour and baking powder are mixed and sifted. Then mixed with sugar and salt. Whisk mineral water, oil, vinegar and vanilla flavouring into a mixing bowl and pour into the flour mixture. Blend with the electric hand mixer on medium speed for about 30 seconds. Pour the dough into a disposable piping bag. Cut off the tip of the piping bag generously. Pipe 6 banana moulds onto the prepared baking paper. This is where the previously drawn bananas on the bottom of your baking paper will help you. Don't pipe them too thickly, because the dough will still diverge a little. Bake in the preheated oven for 10 – 12 minutes until golden brown. After baking, leave on the baking paper. Once completely cool, carefully loosen and place on a wire rack.
Preparation of the cream

For the cream, whip the soft and room-temperature butter for about 5 minutes on the highest setting of your electric hand mixer until light creamy. Add the cooled vanilla pudding by the spoonful and stir in well. Pour the cream into a piping bag and cut off the tip generously again. Pipe the cream onto the bases. Peel the bananas and cut in half lengthwise. Brush with lemon juice and place half a banana on top of each cream and press down a little. Place the banana cakes in the fridge for 30 minutes.
Preparation of the glaze

Melt and temper the couverture. Then cover the banana cakes completely with it.
In the refrigerator, the chocolate bananas will keep well packaged for 2 to 3 days. In most cases, however, they have already disappeared from the refrigerator by then.
