Fried Fish
The perfect fried fish: crispy on the outside and tender on the inside! Who doesn't love it: fine fish fillet fried in oil or fat. French fries are often served as a side dish to the fish dish.

Wash the fish fillets under running water, pat dry and cut into strips 2-3 cm wide. And marinate with 2 tablespoons of vinegar, salt and pepper and leave to infuse for 20 minutes.

In the meantime, separate the egg. Mix the egg yolks with 250 ml of water, flour, starch, salt and pepper to form a smooth dough.

In a large pan or saucepan, heat the fat to around 170 °C.

Beat the egg whites until stiff and add to the dough. Turn the fish strips in flour and pull them through the dough. Fry in the hot fat for about two minutes.

Drain the fish on kitchen paper. Heat the fat to 180 °C and fry the fish for another 1 minute until crispy. Then drain and season with a little salt and vinegar.
